Page12 POST-GAZETTE, AUGUST 8, 2014 Benvenutil This week's recipe, a classic vegetable "antipasto" (appetizer), is a "must have" on every southern Italian table. Knowing how to make "Melanzane sott'olio" (eggplants pre- served in olive oil) is one of the essential skills of a southern Italian cook, a tradition passed from mother to daughter. A taste of this rustic antipasto takes me back to the many Sum- mer vacations spent with "zla" at her house in Calabria where melanzane sott'olio were served on a slice of brick-oven bread alongside sharp local pecorino cheese, freshly made ricotta (that was brought warm from the shepherd, still in its mold made out of straw and wrapped in fig leaves) homemade cured olives and the sweetest tomatoes that my aunt would pick from her garden and sundry right on her balcony. Ajar of "Melanzane sott'ol/o" makes a wonderful little present that will always be remembered. Melanzane sott'olio Four 12 oz. Mason jars 4 large eggplants Fresh mint 6 cups white wine vinegar 6 cloves garlic Salt Basil Red pepper flakes Extra virgin olive oil Preparation: Wash and pat dry the eggplants, slice them into inch discs discarding the ends. Slice the discs into inch strips. Layer the eggplant in a large deep bowl sprinkling salt generously in between. Cover and refrigerate overnight. The next morning, rinse the salt off the eggplants, then drain and squeeze them well setting them on a kitchen towel to dry. In the meantime, bring a pot of vinegar to a boil. Transfer the eggplants into the pot, let simmer for 5 minutes, then drain and squeeze well. Lay them on a kitchen towel to air dry for about 2 hours. In a large pot of water, boil the Mason jars and their lids for 30 minutes then let them cool and air dry completely on a clean towel. Slice the garlic cloves and tear several leaves of mint and basil. Pour a little olive oil into the bottom of the jar then pack tightly the first layer of eggplants {about 1 inch}. Top with a couple slices of garlic, some mint and basil leaves, some red pepper flakes and a little more olive oil. Repeat with 1 inch layers until the jar is full. Top with inch of olive oil before sealing the jar. Let rest in a dark, dry place overnight. For optimal results, let the jars rest for one month. Nel frattempo metti a bolllre raceto in una pentola, versacl le melanzane e fal sobbolllre per 5 minuti qulndl scolale, strlzzale bene e lasclale asciugare su un carlo vaccio per circa due ore. In una pentola capiente fai bollire i vasettie di tappi per 30 minuti quindi toglili dalla pentola e lasciali asciugare completamente su un cane vacio. Affetta finemente l'aglio e spezza gross lanamente con le mani alcune foglie di menta e di basilico. Cospargi il fondo del vasetto con delroilo d'oliva quindi invasa il primo strato di melanzane (circa 2 cm) pressando bene, aggiungi un pale di fette d'aglio, delle foglie di menta e di basilico, il peperoncino e finisci con l'olio d'oliva. Continua con il secondo strato di melanzane fine a riempire il vasetto ricoprendo con uno strato abbondante {circa mezzo centimetro) di olio d'oliva prima di chiudere il vasetto. The real "Happy Hour" comes when U.S. Congress decides to do its job as the second branch of our govern- ment, when Democrats who control the U.S. Senate and Democrats in the U.S. House stop genuflecting at the feet of our president. In America, we have three branches of government who are designed to be a check and balance on each other. In America, we do not have a One Man Government. The Revolutionary War was not a happy hour. It was a painful struggle fought with a desire to create a govern- ment of free people. Leadership is more than photo-ops, fundraisers, golf games and vacations. We had some great leaders in our past. As a baby boomer, three such leaders come to mind, Jack Kennedy, Lyndon Johnson and Ronald Reagan. We need a leader today that our past is prologue too.
