PIZZA TOPPINGS 8 ounces shredded mozzarella 3 tablespoons oregano cheese 1/4 cup olive oil or oil of choice 14 ounces crushed tomatoes Salt 4 tablespoons Romano grated cheese I pizza baking tray approx. 14" x 16" DOUGH PREPARATION: Place lukewarm water in a bowl. Sprinkle yeast over water and mix until dissolved. Add oil, sugar, salt and stir. Gradually add flour until all water is absorbed. If dough is too soft, add additional flour until it is the desired consis- tency. Spread a little oil in bowl before placing dough in bowl. Cover with a dean towel and set aside to rise. Put in a warm place. Dough will be ready for spreading when it doubles in size. PIZZ/ Spread some oil over bottom of baking tray. For ease of spreading dough in tray. moisten both hands with oil. Flatten and spread dough in tray to thickness desired. TOPPINGS: Sprinkle mozzarella over dough, followed by top- ping with crushed tomato. Spread grated cheese and oregano over tomato. Sprinkle olive oil over contents and along inside of edges of pizza. Other toppings of choice like chopped mushrooms veg- etables of choice can be added. Salt to taste. Bake in preheated 400F oven for about twenty minutes. Thickness of dough and the number of toppings may vary time of baking. Bottom of pizza should brown. To increase recipe, guideline is one cup of water for two cups of flour, except when using cake flour. When using cake flour, addi- tional flour may be needed for one cup of water. NOTE: It was always a festive time for our children when my par- ents prepared pizza at home for us. Mama mixed the dough by memory. The children watched Papa add the toppings. After years of watching them at home or in the bakery, I wrote out the inqredi- ents and measurements they used. I have shared this recipe with my children, friends, and relatives. THE LORD OF THE RINGS SYMPHONY Howe Records The Lord of the Rings Sym- phony: Six Movements for Or- chestra & Chorus, was recorded live in concert in Switzerland last February. The six-move- ment piece was composed by Howard Shore and performed by the 21 St Century Symphony Orchestra & Chorus. Maestro Ludwig Wicki personally selected the musicians compris- ing the outstanding orchestra, and who perform on this record- ing. The film trilogy music has been recognized as some of the greatest film music ever written, and spans Shores' three film scores, created from the nearly 12 hours of music composed by Shore, reflecting each of the six books of The Lord of the Rings.
